These Gluten Free Banana Coconut Pancakes are delicious! You will want to make a double batch!
I have several pancake recipes on my blog. They all hold their own weight and deliver what we need for various times of year. But, this recipe is by far my absolute favorite! It is higher in calories, but has no refined sugar and it is good for you! We treat ourselves quite often on the weekends with this healthy treat! The kids love, the hubs loves it, I love it and we all feel like we are splurging. But guess what, we aren’t!
gluten free, allergy- free, vegan, refined sugar-free
- 2 eggs
- 1 1/4 cups Gluten Free Flour
- 2 tsp Baking Powder
- 1/4 tsp salt
- 1 scoop Protein Powder
- 1 1/4 cups Coconut (Cartoned) Unsweetened Milk
- 3 Tbsp Coconut Oil Melted
- 1/4 cup Unsweetened Shredded Coconut
- 1/2 tsp Cinnamon
- 1 Banana (smashed)
- Maple Syrup
- Add all ingredients and mix well.
- In a large skillet use 1/2 batter for 3 pancakes
- Repeat with remaining batter.
- Garnish with additional coconut and banana.
- Serve with maple syrup.
I usually make two batches of the dry ingredients. I store the second batch in a ziploc bag and place on my shelf. Then I have it for later in the week on busy mornings. All I have to do is add the wet ingredients and prepare. Voila! Makes life easier for those busier mornings!
