I would be a BIG LIAR if I said this recipe was all my idea but, nope it was not! You see I have friends and family on the clean eating journey with me and they supply me with new recipes all of the time, not just for my family and I’s palette but, for yours too! Always nice to have your loved ones on the journey to better health with you! Am I right?!
This recipe is easy, clean, full of veggies and protein. So all in all, a good hardy breakfast, snack or in my case, dinner. I love breakfast for dinner!
Clean Eating with Fried Eggs & Sweet Potato Hash
My kids love this recipe and it keeps them full for a bit. I do not know about your kids, but mine are always and forever hungry!
Fried Eggs with Sweet Potato Hash
Cuisine: Whole 30
- 1/2 cup diced sweet potato
- 1/4 cup chopped onion
- 1/4 cup chopped spinach
- 1/2 teaspoon coconut oil
- 2 eggs
- Sauté the sweet potatoes, onions and spinach in coconut oil just until the sweet potatoes are done.
- Fry the eggs in the remainder of coconut oil.
- Add Pink Himalayan Salt and Pepper.
- Voila! Done!
See easy! I absolutely love sweet potatoes in the Fall, so make sure you add it to your Fall Clean Eating Menu! You won’t be sorry!
