Everyday Clean Eating Dinner Recipes

A few of you have asked for a peek into my dinner recipes and I figured I would give you my weekly meal plan instead for this week. Keep in mind I am a super simple kinda gal, simple ingredients, low prep time, SIMPLE, SIMPLE, SIMPLE!

Also keep in mind when I cook, I cook double batches so I can freeze for a later date. Makes life a whole lot easier!

So let’s get started…..

Monday

Breakfast for dinner!

We do this at least once a week and its super-duper simple. I make omelets with my favorite veggies. The kids get pancakes or grits and VOILA! Done!

Tuesday

Chicken Quesadillas with Homemade Guacamole

Directions

Drizzle the pan with olive oil. Place your tortilla in the pan. Add all of your fillings to half of the tortilla. Fold the tortilla in half, heat until the cheese is melted inside and the outside is grilled.

Homemade Guacamole

  • 1 cup avocado puree
  • 1/2 cup plain greek yogurt
  • 1 tablespoon lime or lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic powder

Directions

Stir together the avocado, yogurt, lemon or lime juice, salt, and garlic powder. If not serving immediately lay a sheet of plastic wrap directly on the surface and press with your fingers to seal out the air. Refrigerate for up to 2 days. Or freeze for 1 month. (But ours never makes it to the freezer, we always eat all of it!)

* If you are on the 21 Day Fix make sure you measure everything in your containers.

Wednesday

Turkey Meatballs

Makes 6 servings, 5 meatballs each.

Directions

Pre-heat oven to 400 degrees F. Lightly spray large baking sheet with non-stick cooking spray, set aside. Combine turkey, salt, mustard, paprika, egg, oats, garlic and tomato sauce in a large bowl; mix well by hand. Roll mixture into 30-1 inch meatballs. Place on prepared baking sheet. Bake for 15-20 minutes, or until no longer pink in the middle.

*Each serving equals one red and 1/2 yellow container on the 21 day fix.

Chicken Potatoes and Green Beans

Thursday

Ranch Chicken with Potatoes and Green Beans

This recipe serves 4.

  • 2 lbs boneless skinless chicken breasts
  • 3 tbsp Ranch Seasoning mix (see below for clean recipe)
  • 1/4 cup olive oil
  • 6-8 red potatoes
  • 12 oz green beans (fresh or frozen)

Directions

  1. Cut potatoes into bite size pieces and place into 1/3 of a 9×13 baking dish.
  2. Depending on size of chicken, you may want to slice them into smaller pieces. I had 2 large chicken breasts that were rather thick. So I sliced them in half down the middle to make them thinner (so much easier than pounding them out), then I cut them again in half to make two smaller pieces from each half. So each large breast makes four smaller pieces.  Place the chicken in the middle third of your baking dish.
  3. Fill up the remaining third of your baking dish with the green beans.
  4. Sprinkle entire dish evenly with Ranch Seasoning. Pour the olive oil over all the food.
  5. Cover with foil and bake at 350 degrees for 1 hour.

Ranch Seasoning Mix

  • 5 Tablespoons dried minced onions
  • 7 teaspoon parsley flakes
  • 4 teaspoon salt
  • 1 teaspoon garlic powder

Mix together and store in an air tight container.

Friday

Slow Cooker Roasted Chicken

This roasted chicken is super easy and delicious!
Serves 6
Ingredients
  • 3 – 4lb roasting chicken
  • 3-4 stalks of celery
  • 4-5 whole carrots
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • ½ teaspoon thyme
  • Be creative with your spices, add to your liking.
Directions
  1. Cut the celery and carrots into 2 inch pieces. Add to the bottom of the slow cooker.
  2. Rinse the chicken and pat dry. Place on top of the celery and carrots.
  3. Top with salt, pepper and paprika.
  4. Cook on low for 5-6 hours.
  5. Note: No water is needed – the moisture all comes from the vegetables and chicken. In the end you will have a nice chicken broth!

So there you have it. I told you my weekly meal plan is super-duper easy! I don’t like to spend a lot of time in the kitchen at all! All of these recipes are quick, simple, easy, clean and yummy.
