It is so hard to find snacks that are nutritious and keep with our healthy lifestyle without the guilt and without the struggle of getting them to eat it. Can you feel me? When my  kids were younger, I loved getting them to help me with this recipe. And now that they are older they can make them by themselves with no help and I know they are getting something nutritious and good for them. 

Now that I make them so often, friends and family always ask for them too! But, for realz you do not have to tell them how easy they are. They will never know. Your secret is safe with me, I promise.

  • Preheat the oven to 350° F.
  • Grease a cookie sheet with coconut oil, set aside.
  • Pulse the two ingredients for a few moments in a food processor until very well combined.
  • Spoon mixture on the greased cookie sheet and bake in the preheated oven for 25 minutes or until golden.

Tips

  • Keep a really good eye on them and check them often in your oven. You don’t want them to burn. They can and will burn very quickly.
  • We love our cookies crispy. The longer you bake them the crispier they get. Remember to watch them though… again, they can and will burn if you aren’t careful. 
  • These are perfect paired with a great cup of coffee or even perfect for breakfast. The kids think they are being naughty by eating cookies for breakfast. Little do they know that they would eat the ingredients individually for breakfast anyway. When we eat them for breakfast we make sure to make some scrambled eggs with them for added protein, healthy fats and nutrition.
